Supergreen salad

This is one of my favourite salads; it works really well as a side or with some protein as a main meal. Last night we ate it with a beautiful piece of organic grass fed ribeye- Yum!

Ingredients

1-2 handfuls rocket/ baby chard/ baby spinach

1 handful kale finely chopped

1 avocado

1/2 cup roast pumpkin &/or roast beetroot

2 Tbsp pomegranate seeds- You can substitute blueberries if unavailable

2 Tbsp pepitas

Good quality Olive Oil (EVOO) or Macadamia oil.

Good quality balsamic vinegar

Note: you may also wish to add in some goats feta (not if you are doing the detox though)

Method

  1. Wash and dry rocket and kale and place in a large bowl.
  2. Drizzle greens with some EVOO and balsamic to taste then toss through with tongs
  3. Chop avocado into segments
  4. Place greens onto a salad platter then scatter avocado, roasted vegetables, pomegranate and pepitas over the top.
  5. Enjoy.
