One of the things I have re introduced since finishing the detox is cacao. If you are doing the detox, you can simply omit it.
3 cups of raw nuts. I used 1 cup almonds, 1 cup macadamias, 1/2 cup brazil nuts and 1/2 cup cashews.
3/4 cup pepitas
1/4 cup sunflower seeds
1/4 cup chia seeds. I use a combination of white and black.
1/2 cup cacao nibs. I like the crunchiness of the nibs, use cacao powder if you prefer. Half powder & half nibs works well too.
3 heaped tablespoons mesquite powder
2 tablespoons maca powder
10 medjool dates. Or 1 cup pitted dried dates soaked in a small amount hot water. (drain liquid before adding to blender.)
1/4 cup goji’s
1/3 cup coconut oil (as a liquid)
Optional: coconut water
1-2 scoops Vital Greens pea protein powder
Note: this varies a little bit depending on if you want your balls to be smooth or have a few chunks in them. Simply blend for a few extra seconds if you want your mixture to be smooth.
Add nuts intoThermomix or food processor and whizz on high speed until you have some powder and small pieces.
Pour into a large bowl
Add seeds (except chia) and cacao nibs and whizz for a few seconds until in small pieces. Pour into nut mixture in bowl and combine.
Add dates and goji’s to Thermomix and whizz until broken down.
Combine half the nut and seed mixture with the fruit in your Thermomix & blend until combined. (You may add all dry ingredients if you have enough room, otherwise combine in bowl just before rolling into balls.)
Add mesquite, maca, chia seeds and blend on low speed, slowly adding the coconut oil until the mixture becomes sticky.
Pour mixture into large bowl. Mixture is the right consistency if it holds together when squeezed..
If it is too dry, add some coconut water or filtered water slowly.
If it is too wet, blend up some more nuts and seeds.
Roll mixture into balls & store in an airtight container in fridge.
