Paleo Protein ball recipes

You do not need to be overly particular with your quantities here. As long as your mixture is moist enough when combined to roll into balls, all will be well. If the mixture is too wet, simply add more dry ingredients, if too dry to combine well add small amounts of coconut oil or coconut water.

Sassy Spirulina & Protein Balls

1 cup whole raw almonds

1 cup whole raw cashew nuts
- you could also use macadamias, pecans or a combination.

½ cup pepitas (or combination of seeds. e.g chia, flaxseeds, sesame seeds.)

½ teaspoon sea salt

1 teaspoon organic ground cinnamon

1 scoop (21 g) vital protein powder (pea protein)

1- 2 tsp spirulina powder

10 whole fresh pitted dates
 (or you can use dried dates soaked in a little hot water or coconut juice.)

Organic coconut oil

Organic shredded coconut to roll

Method

Combine all the dry ingredients into thermomix or food processor and whizz until you get a crumb like consistency.

Add dates and whizz through.

Tip mix into a bowl. Squeeze the mixture and it should start to combine.

Gradually start to add in some coconut oil (it should be liquefied.) You may also want to add a few more dates or some dried apricots for extra stickiness.

The mix should come together when squished with the hands.

Roll into small balls, then roll in coconut and store covered in the fridge until needed.

 

Gorgeous Goji Nut Balls

1 cup raw nuts. Macadamias, almonds, cashews

¼ cup seeds- flaxseeds, chia seeds, pepitas, sesame seeds

½ cup organic goji berries

2/3 to 1 cup dried fruit. Dates work well as do apricots and cranberries.

1-2 tablespoons organic tahini

3 tablespoons coconut oil (as liquid)

Agave or best quality honey (optional)

Method

Combine all the dry ingredients into thermomix or food processor and whizz until you get a crumb like consistency.

Add dates and whizz through.

Tip mixture into a bowl. Squeeze the mixture and it should start to combine.

Add tahini then gradually start to add in some coconut oil

The mix should come together when squished with the hands.

You may wish to drizzle the mixture with a little honey or agave for added sweetness.

Roll into small balls, then roll in coconut and store in airtight container in the fridge.
